Description
The Engineering Behind Triply: Solving the “Burnt Steel” Crisis
The biggest complaint about cooking in standard stainless steel is the dreaded “hot spot”—the direct area above the flame gets intensely hot, burning your onions and spices instantly, while the edges remain cold. The Hawkins Pro Triply series entirely engineers this problem out of existence. It uses three bonded layers of metal: an inner layer of food-grade 18/8 stainless steel, a thick core of pure virgin aluminum that runs across the entire base and up the curved walls, and a magnetic AISI 430 steel outer layer. The aluminum core acts as a massive thermal highway, pulling heat away from the center and distributing it flawlessly across the entire kadhai. This means zero hot spots and perfectly even browning.
Unlike flat sauté pans, this kadhai features a perfectly engineered deep spherical curve. When deep frying snacks like medu vadas or french fries, this narrow-bottom geometry allows you to achieve maximum oil depth using significantly less cooking oil. Furthermore, the triply walls maintain the oil’s temperature efficiently, preventing the drastic temperature drops that normally result in soggy, oil-soaked food when you add cold ingredients.
All-Steel Architecture: Durability over Comfort
This specific model (PSK15S) is the “Pro” variant, meaning it abandons wooden or Bakelite handles in favor of heavy-duty stainless steel wire handles and a solid steel lid. While this means you will need a kitchen towel to grip the handles during prolonged high-heat deep-frying, it makes the kadhai absolutely indestructible and fully oven-safe. The solid steel lid perfectly traps steam for low-heat simmering (dum cooking) and will never shatter if dropped on a hard tile floor, unlike fragile tempered glass lids.
Pre-Heating Protocol and Maintenance
Cooking in triply stainless steel requires a specific technique. You must pre-heat the empty kadhai on medium heat before adding oil. When a drop of water flicked into the pan forms a bead and dances across the surface (the Leidenfrost effect), the steel has naturally become non-stick. You can then add your oil and temper your spices without anything sticking to the bottom.
- Cleaning Protocol: Because it is solid triply steel, you can aggressively scrub it with heavy-duty green Scotch-Brite pads or metal scrubbers. If rainbow-colored heat tints or white calcium deposits appear, simply wiping the interior with a few drops of white vinegar or lemon juice will instantly restore the factory mirror polish.
- Maintenance Warning: Never throw a blazing hot triply pan directly under cold tap water. While it is incredibly thick (usually around 3mm), extreme thermal shock can cause the bonded metal layers to warp over decades of abuse. Always let it cool slightly before washing.
- Triply aluminum core guarantees 100% even heat distribution with no hot spots.
- All-steel handle and lid design makes the kadhai immortal and fully oven-safe.
- Food-grade 18/8 inner steel does not react with highly acidic tamarind or tomatoes.
- Fully compatible with modern induction cooktops and traditional gas burners.
- 1.5 Litre capacity is very small; practically usable for only 1 to 2 people.
- Solid steel handles will get uncomfortably hot during long deep-frying sessions.
- Solid steel lid prevents you from visually monitoring the food without lifting it.
Target Demographics: Is the Hawkins 1.5L Triply Kadhai Right For You?
This compact 1.5-litre kadhai is the perfect tactical addition for bachelors, couples, or large families who need a dedicated pan for side dishes. Priced in the premium ₹1,300 to ₹1,600 tier, it is too small for making a main-course chicken curry for four people, but it is the absolute ultimate tool for executing heavy tadkas (tempering), deep-frying small batches of papads, or making single-portion gravies. It is an immortal piece of cookware that will last generations.
Do not underestimate how small 1.5 Litres is! This is the brim capacity. The practical cooking volume is less than 1.2 Litres. If you are cooking for a family of 3 or more, this kadhai will be frustratingly tiny, and your stir-fries will spill over the edges. For family cooking, you must step up to the 2.5 Litre or 3 Litre variants in the Hawkins Triply lineup.
Is this kadhai safe to wash in a dishwasher?
Yes, absolutely. Because the Pro model (PSK15S) uses solid steel handles without any rosewood or plastic attachments, it is 100% dishwasher safe and can withstand harsh alkaline dishwasher detergents without any aesthetic damage.
Why did my triply kadhai turn slightly yellow/blue inside?
This is a harmless cosmetic occurrence known as “heat tint,” which happens when stainless steel is heated to high temperatures. It does not affect cooking safety. You can easily remove these stains by wiping the pan with white vinegar or a paste of baking soda and lemon.
Do I need to use silicone spatulas to prevent scratching?
No. One of the massive benefits of Triply Stainless Steel is its extreme durability. You can safely use traditional steel spoons, ladles, and chimtas without worrying about toxic flaking or ruining a non-stick coating.

Test Kitchen Recommended Pairings
To maximize the utility of this compact deep-frying pan, we recommend pairing it with tools designed for high-heat oil tasks:
Stainless Steel Spider Skimmer (Jhara)
Since this kadhai is metal-spoon friendly, a high-quality stainless steel wire skimmer is the perfect tool for rapidly scooping out vadas or pooris while instantly draining away the excess hot oil.
✔ Essential Frying Companion
Thick Cotton Kitchen Mitts
The “Pro” variant uses solid steel handles that will absorb heat during a 30-minute frying session. A pair of thick, heat-resistant cotton mitts or towels is mandatory for safely lifting the kadhai off the stove.
✔ Essential Safety Tool
📊 Expert Editorial Summary: Is the Hawkins 1.5L Triply Worth It?
After rigorous kitchen testing, the Hawkins Pro 1.5L Triply Deep-Fry Pan proves exactly why bonded metals are the future of Indian cooking. It completely eliminates the hot spots and scorched spices associated with normal steel, allowing for flawless browning and deep frying. - ✦ Deep-Fry Geometry: The curved kadhai shape minimizes oil usage while maximizing depth for perfectly frying snacks.
- ✦ Flawless Induction: Heavy magnetic steel exterior sits perfectly flat and highly responsive on modern induction hobs.
Test Kitchen Showdown: Hawkins Triply vs. Hard Anodised & Non-Stick
When buying a compact 1.5-litre kadhai for deep-frying banana chips or executing a heavy mustard-seed tadka, the material you choose dictates the safety and lifespan of the pan. To see if the Hawkins Pro Triply (PSK15S) justifies its premium price tag, we ran it head-to-head against the legendary Hawkins Futura Hard Anodised Kadhai (1.5L) and a standard Teflon-coated Non-Stick Kadhai.
During our side-by-side evaluations in our Kerala test kitchen, we focused heavily on the physics of deep-frying. We monitored how rapidly the oil temperature dropped when a batch of cold murukku batter was dropped in, tested the limits of the handles during a 30-minute high-flame session, and brutally scrubbed the pans to remove the sticky, polymerized oil residue left behind after frying.

Reality Check 1: The Deep-Frying Temperature Trap
Using a cheap Non-Stick Kadhai for deep-frying is a severe health hazard. Frying oil regularly exceeds 200°C (390°F). At these temperatures, the thin PTFE (Teflon) coating begins to break down, releasing toxic polymer fumes and eventually flaking into your hot oil. Both the Hawkins Triply and the Futura HA are engineered specifically for high heat. Their massive thick cores absorb and hold the heat, ensuring that when you drop a cold batch of chicken 65 into the oil, the temperature doesn’t instantly plummet, resulting in crispy exteriors rather than soggy, oil-logged food.
Reality Check 2: The “Pro” Handle Trade-off
The Hawkins Futura features elegant, stay-cool rosewood handles. They are comfortable but fragile—you cannot put them in a dishwasher, and they will burn if the gas flame licks up the sides of the small 1.5L pan. The Hawkins Pro Triply (PSK15S) utilizes solid stainless steel wire handles. While this means you absolutely must use a kitchen towel to lift the kadhai off a hot stove, it makes the pan totally immortal. You can throw it into a harsh dishwasher cycle or bake a dish directly in the oven without fear of melting or rotting handles.
Reality Check 3: Scrubbing Polymerized Grease
After deep frying or making a heavy tadka, oil splashes onto the upper walls of the kadhai and bakes into a sticky, brown resin (polymerized oil). You cannot use a harsh steel scrubber on a Non-Stick Kadhai (it will destroy the coating). While the Futura HA is durable, aggressive scrubbing can slightly dull its black finish. The Hawkins Triply Stainless Steel is the undisputed champion of cleanup. You can attack it with heavy-duty green scrub pads, steel wool, and abrasive powders. A quick wipe with vinegar restores its brilliant silver mirror polish, making it look brand new even after years of aggressive use.
🎯 The Definitive Buying Verdict
- Buy the Hawkins Pro Triply (PSK15S) if: You want an indestructible, dishwasher-safe, heavy-duty pan for small batch deep-frying and heavy tadkas. You don’t mind using a kitchen towel to hold the steel handles in exchange for a kadhai that will literally outlive you.
- Buy the Hawkins Futura HA (1.5L) if: You want similar heavy-gauge heat distribution but prioritize the comfort of stay-cool wooden handles, and you always hand-wash your cookware.
- Buy the Standard Non-Stick if: You are strictly making delicate, low-heat stir-fries or sticky sweets with very little oil. Never use a Teflon kadhai for high-heat deep-frying.

Anuradha Bhatt –
I have been using Hawkins products in the kitchen for the last 35 years at least. I used to buy the pressure cookers with extra gaskets from india and bring them to use in the uk. I’ve used their karahi and pans, the new anodised stove to table cookware and never had a problem with its use or quality. It’s pretty much the top brand in India and I am so glad to find it available on Amazon. Nothing in U.K. compares to Indian brands of cookware, for cooking authentic Indian food. I’ve just bought a lot now because I’m so pleased I don’t have to wait for my next trip to buy their newer designs. They really last if used correctly and with care, pressure cookers have been going for the last 20 years and I wouldn’t be without them. I am gushing because it is quality cookware at affordable prices finally. Best kept Indian secret for many years.

This triply kadhai is really good, heat spreads evenly and so the food doesn’t burn that easily, handles don’t heat up which makes it easy to lift. The steel lid lid is really nice as well.
Protip: keep the flame on low to medium to avoid food from burning or sticking in all triply cookware.
Manjunath Shellikeri –
